Fried Rice                      Jan Peterson

1 cup bean sprouts            1 Tbsp. Vegetable oil

1 cup sliced mushrooms            3 cups cooked rice

1 cup Pork (or turkey or chicken)            2 green onions, sliced

1 can sliced water chestnuts


Heat 1 Tbsp. oil in wok or large skillet.  Cook and stir mushrooms until cooked, add sprouts, rice, pork, onions and chestnuts.  Cook and stir, breaking up rice, until heated through

Push rice mixture to sides making well in center, add 1 Tbsp. oil, pour in beaten eggs.  Stir eggs until they begin to scramble, then mix them into rice and stir well.  Add soy sauce and pepper.
