Jambalaya                        Kurt Congleton

1 cup Uncle Ben's converted rice uncooked                        1/4 cup oil

1/4 cup chopped onion                        1/2 cup chopped green pepper

1/4 cup chopped celery                        1/8 tsp. pepper

1/4 tsp. salt                        1 can consomme (beef)            

1/2 tsp. cayenne (ground red) pepper                        1 can water

1 medium can tomatoes                        2 cups diced ham

1 pkg. frozen cooked shrimp or 1 1/2 lbs. fresh

Some spicy sausage (optional, but good)

 

Heat oil in large pot.  Add rice, onion, green pepper and celery:  Cook over medium heat, stirring frequently until lightly browned.  Add salt, pepper and cayenne, consomme and water.  Stir - cover, bring to boil.  Reduce heat and cook until rice is tender.  Add tomatoes anytime while rice is cooking.  When rice is tender, add ham and shrimp.  Mix in well.  (Probably double this)
