Salmon Casserole                        Marge Breiwick (Stan's Mother)

1 pkg. green spinach noodles cooked

Make medium white sauce

3 Tbls. butter                        1/4 tsp. salt

3 Tbls. flour                        1/8 tsp. pepper

1 cup milk

 

Melt butter in heavy saucepan.  Blend in flour.  Cook over low heat until smooth and bubbly.  Remove from heat.  Stir in milk.  Bring to boil for 1 minute, stirring constantly.  Add salt and pepper.  Cook until thickened.  Add some sharp cheddar cheese to this and 1 can cream of celery soup.  Alternate layers in casserole, noodles with white sauce and salmon.  On top layer of salmon add chopped fine onions.  Bake 45 minutes at 350 degrees.  Top with 1/2 lb. sour cream mixed with 3 Tablespoons mayonnaise, 1 Tablespoon horseradish mustard.  Cover this with shredded sharp cheese.  Bake till cheese is melted.
