Shrimp Cheese Casserole                        Shelly Congleton

1 cup finely chopped onion                        1 Tbsp. butter

2 lbs. boiled shrimp                        4 cups cooked rice

2 -   10 1/2 oz. pkg. frozen broccoli cooked                        1 - 16 oz. Jar cheese spread

2 cans cream of mushroom soup                        2 - 4 oz. cans mushrooms

1 cup finely chopped red bell pepper

 

Saute celery and onion in butter.  In large bowl, combine onion and celery with shrimp, cooked rice and cooked broccoli.  Add cheese, soup, pepper and mushrooms.  Bake in large casserole dish at 350 degrees for 35 minutes or until hot.
