Coconut, Chocolate  & Macadamia Nut Cookies                        Jan Peterson      

2/3 cup margarine                        2/3 cup sugar

1/2 cup packed dark brown sugar                        1 large egg

1 teaspoon vanilla                        1 1/2 cups flour

3 bars (3 oz. each) Swiss dark chocolate chopped in pieces

1 1/2 cups sweetened flaked coconut

1 jar (3 1/2 oz.) macadamia nuts chopped

 

Heat oven to 325 degrees.  Lightly grease two cookie sheets.  In large bowl or electric mixer beat butter, sugars, egg and vanilla until fluffy.  Add flour until blended.  Stir in chocolate, coconut and nuts.  Drop heaping tablespoons dough 1 1/2 inches apart on to prepared cookie sheets.  Bake 1 sheet at a time 17 minutes or until edges of cookies are lightly browned and tops look dry.  Cool on sheet on wire rack 5 minutes.  Remove to rack to cool completely.  Makes 26 cookies.  We made these with the macadamia nuts we brought home from our Hawaiian trip and they were excellent.
