Finnish Shortbread                                          Joyce Schwarm

2 cups butter                                          1 cup sugar

4 cups flour                                          Pinch salt

Ground almonds (about 1 cup)

 

Sift flour, sugar and salt together.  Add butter and knead like bread or pie crust until it forms into ball.  Roll into slender rolls, like a pencil, and flatten with palms of your hands.  Cut crosswise in 2 inch lengths.   Brush cookies lightly with egg white.  Sprinkle the sugar and almonds on top of egg white.  Bake at 375-400 until slightly brown.  (I also used a little cinnamon on top).
