Taco - Bean Dip                                          Kurt Congleton

3 medium, ripe avocados                         2 Tbsp. lemon juice

1/4 tsp. white pepper                                 2 tsp. salt

1 cup (8 oz.) sour cream                           2 cup mayo

1 pkg. taco seasoning mix                       2 cans bean dip

1 cup green onions with tops chopped          3 medium tomatoes chopped

1 - 8 oz. pkg. sharp shredded cheddar cheese         

1 can pitted ripe olives drained and sliced

Tortilla Chips                                              


Peel and pit avocados.  Place in blender with lemon juice, salt and pepper, blend and set aside.  In  bowl combine sour cream, mayo and taco seasoning.  Mix thoroughly - set aside.  Spread bean dip in a 9 x 13 pan.  Pour avocado mixture on top.  Layer with sour cream mixture.  Sprinkle with chopped onions,  tomatoes and olives.  Cover with shredded cheese.  Chill 1 hour.
