Applesauce Muffins                                                      Sharon Benda

1/2 cup butter/margerine                                              1/2 cup sugar

2 eggs                                                                            3/4 cup applesauce

1 3/4 cup flour                                                                1 Tbsp. baking powder

1/2 tsp. salt


Cream butter and sugar until fluffy.  Beat in eggs one at a time.  Beat in applesauce.  Beat well.  Combine flour, baking powder and salt.  Mix into first mixture.  Spoon into 36 tea size (1 3/4") muffin pans.  Bake at 425 degrees for 15 minutes.  While warm, dip into 1/4 cup melted butter and then into sugar (1/2 cup) and cinnamon (1/4 tsp.) mixture.  Serve warm or cold.  Also makes 12 large muffins.  Bake 25 minutes.
