Banana Coconut Loaf                                    Joyce Schwarm

2 c. flour                                                          ½ c. vegetable oil

1 tsp. baking powder                                      ¼ c. buttermilk

½ tsp. baking soda                                         1 c. mashed bananas

½ tsp. salt                                                       1 tsp. vanilla

1 tsp. cinnamon                                              2/3 c. shredded coconut (divided)

2 eggs                                                             ½ c. pecans, chopped

1 c. sugar                                                        ½ c. chocolate chips

 

Mix flour, baking powder, baking soda, cinnamon and salt.  Beat the eggs, sugar, and then beat in the oil, buttermilk, bananas and vanilla.  Make well in flour mixture and add the egg mixture into flour.  Stir until moistened and batter is mixed.  Fold in 1/3 cup of coconut, the pecans and chocolate chips, pour into greased 9 x 5 x 3” loaf pan or two smaller ones.  Sprinkle top with remaining coconut. 

Bake at 350 degrees for one hour or until done.
