Blueberry Muffins-1                                                    Bev Helling

1 egg                                                                              1/2 cup milk

1/4 cup melted butter                                                    1 1/2 cup flour

1/2 cup sugar                                                                 2 tsp. baking powder

1/2 tsp. salt                                                                    2 dashes cinnamon

1 tsp. vanilla

1 cup well drained blueberries (water packed or sweetened)

 

Preheat oven to 400 degrees.  Grease bottoms of 12 medium size muffin cups or use muffin papers.  Beat egg; stir in milk and butter.  Mix in remaining ingredients, just until moistened (about 20 to 25 seconds).  Batter should be lumpy.  Fold in blueberries.  Fill muffin cups 2/3 full.  Bake 20 to 25 minutes or until golden brown.
