Christmas Bread                                            Jan Peterson

5 eggs                                                             2 cups powdered sugar

2 1/4 cups flour                                               3/4 cup chopped walnuts

2/3 cup raisins                                                2 tsp. baking powder             

4 oz. chopped candied orange peel                1/2 tsp. salt

1 cup butter                                                    1 Tbsp. grated lemon peel

1 tsp. vanilla                                                   3 Tbsp. vodka or brandy

 

Beat eggs with sugar 5 minutes at high speed of electric mixer.  Mix nuts, raisins, and orange peel with 2 Tbsp. flour.  Mix remaining flour with baking powder and salt.  Cream butter, lemon peel and vanilla extract until fluffy.  Beat in vodka.  Add egg mixture gradually, beating constantly.  Add flour mixture and beat 5 minutes.  Fold fruit-nut mixture into the batter.  Turn  into a generously greased and floured 9 x 5 x 3 inch loaf pan.  Bake at 350 for one hour.  Cool cake in pan on wire rack 10 minutes.   Turn cake out onto rack; cool completely.  Wrap in plastic wrap and store 1 or 2 days to mellow.  Sprinkle with confections' sugar or ice with Powdered Sugar and lemon juice icing. 

I made this for our Polish Christmas reunion and it was very good.  I used the bread maker on manual and turned in the fruit/nut mixture at the very end of the cycle.
