Coconut Bread                                               Jan Peterson

1 ½ cups flour                                                 1 tsp. Baking Soda

1/4 tsp. Baking Powder                                  1/4 tsp. Salt

1 cup sugar                                                     ½ cup vegetable oil

2 eggs, beaten                                                1 tsp. Vanilla

½ cup buttermilk                                            3/4 cup toasted coconut

½ cup chopped nuts (optional)

 

Combine flour, baking powder, soda and salt.  In large bowl, combine sugar, oil, eggs and vanilla.  Add dry ingredients alternately with buttermilk.  Stir just until moistened.  Fold in coconuts and walnuts. Pour into loaf pan coated with non-stick cooking spray.  Bake in preheated 300 degree oven on lowest rack for 45-60 minutes or until toothpick comes out clean.  Can be doubled and made in 3 small loaf pans for quicker baking time.
