Pumpkin Spice Bread (or
Muffins) Kathy Brabander
3 cups flour 3
½ cups sugar
1 ½ tsp. cinnamon 1 ½ tsp.
nutmeg
1 ½ tsp. salt` 2
tsp. baking soda
1 cup corn oil (not canola
or vegetable oil) 2/3 cups water
4 eggs 1
– 16 oz. can pumpkin
1 ½ cups chopped walnuts.
Preheat over to 350
degrees. Grease and liberally flour 3 –
9 x 5 loaf pans. In bowl, mix together
flour, sugar, cinnamon, nutmeg, salt and baking soda. Add corn oil, water, eggs and pumpkin. Mix well with an electric mixer. Stir in nuts.
Pour into pans. Bake for one hour
or until toothpick inserted in middle comes out clean. For muffins, fill muffin tins ¾ full.
