Zucchini Pineapple Bread                              Becky Grasso

Beat 3 eggs.  Add 1 cup oil, 2 cups sugar and 2 tsp. vanilla.  Beat until foamy.

Add:

2 cups zucchini                                                1 cup drained pineapple

3 cups flour                                                     2 tsp. baking soda

1 tsp. salt                                                        1 tsp. baking powder

1/2 tsp. cinnamon                                           1/2 tsp. nutmeg

Add 1 cup nuts or raisins. 

Bake at 350 for 1 hour - makes two loaves.
