Baked Cinnamon Apple French Toast                 Kurt Congleton

Serves 4-6

1 small loaf french bread, sliced (fairly thick - about 1")

2 eggs                                                                            1 ˝ cups milk

2 tsp. Vanilla extract

3 large tart green apples, peeled, cored and cut into thin slices (don’t be afraid to pile these on!)

˝ cup sugar                                                                 1 tsp. Ground cinnamon

1 Tbsp. (Or more) butter, cut into small pieces

Preheat oven to 400 degrees

Lightly spray a 9 x 13 baking dish with cooking spray. 

Arrange the bread on the bottom of the pan. 

In a bowl, whisk together the eggs, milk and vanilla until smooth and well-blended.  Pour this mixture completely over the bread.  Arrange the apple slices on top of the bread.  Combine the sugar and cinnamon and sprinkle this on top of the apple slices.  Dot evenly with butter (I wouldn’t be shy with this either and put on more than they call for).  Bake for 35 minutes or until the apples are soft and the custard has set.  Let cool for 5 to 10 minutes before serving.  Serve with syrup as you would regular french toast.
