Carrot Cake Chris Peterson

Mix in bowl:

2 cups flour 2 tsp. Soda

2 tsp. Cinnamon 1 tsp. Salt

With electric mixer, in a bowl combine:

1 3/4 cup sugar 1 cup vegetable oil

4 eggs 3 cups grated carrots

cup walnuts (optional)

Add the flour mixture slowly while mixing. Pour into large rectangular pan (sprayed with Pam). Bake 50 minutes at 350 degrees.

Frosting for Carrot Cake

1 lb. Powdered sugar 1 - 8 oz. Cream cheese

1/4 cup butter 2 tsp. Vanilla

Beat. Frost cooled cake and refrigerate overnight because it tastes way better the next day.
