Maraschino Cherry Cake                                   Grandma Petersen (Lil)

2 3/4 cup flour                                                       1 3/4 cup sugar

4 teaspoon baking powder                               1 teaspoon salt

2/3 cup shortening                                               1/3 cup juice from cherries

2/3 cup milk

16 maraschino cherries, cut in eighths


Sift first four ingredients.  Add other ingredients and beat vigorously with spoon for 2 minutes(150 strokes) or mix with electric mixer on medium speed for 2 minutes.



2/3 cup unbeaten egg whites (5) and beat two more minutes.  Fold in 1/3 cup chopped nuts.

Pour batter into 2 8' round pans or 13 x 9 pan.  Bake 30 ‑ 40 minutes until top springs back when lightly touched.  When cake is cool, frost with a cooked egg white frosting using cherry juice in place of water.
