Pineapple Cake                                                    Sharon Benda

2 eggs                                                                     1 can crushed pineapple w/syrup

2 cups flour                                                            1 cup sugar

1 cup brown sugar                                              1 cup nuts

2 teaspoons baking soda                                  1 1/2 tsp. vanilla or almond extract

 

Beat eggs until light.  Add pineapple, flour, sugars, soda and flavoring.  Mix by hand.  I suppose you could use a spoon, just until it is mixed.  Do not beat.  Put into ungreased 9 x 13 pan, bake at 350 degrees for about 50 minutes or until done.  This is a course cake, but very tasty.  Frost however you like.  Cream cheese frosting would be nice.
