Pineapple Upside Down Cake                                     Jan Peterson

3 eggs, separated                                                       1 cup sugar

½ cup brown sugar                                                    1 cup flour

¼ cup melted butter                                                   1 tsp. baking powder

Pineapple slices to fit 8 ½ x 11 inch pan                    7 Tbsp. pineapple juice

Place melted butter and brown sugar in pan and top with pineapple slices.  Beat egg whites and set aside.  Beat egg and sugar; add flour, baking powder and juice.  Fold in the beaten egg whites.  Can double recipe.  Bake at 350 for about 35 minutes or until sides come away from pan.
