Zucchini Orange Cake                                 Deloris Isaacson

1 cup soft butter                                           1 Tbsp. grated orange rind

1 tsp. cinnamon                                            ½ tsp. nutmeg

¼ tsp. cloves                                                 2 cups packed light brown sugar

4 eggs                                                             3 cups flour

3 tsp. baking powder                                    ½ tsp. salt

1/3 cup orange juice                                     1 cup shredded zucchini

In large mixing bowl, cream butter, orange rind, cinnamon, nutmeg, cloves and brown sugar.  Beat in eggs one at a time.  Mix flour, baking powder and salt, blend into creamed mixture, alternating with orange juice.  Stir in zucchini.  Turn into a greased 10” tube pan.  Bake at 350 degrees 55 to 65 minutes or until done. Cool 10 minutes and remove from pan and cool

White Glaze

1 ½ cup powdered sugar

1 Tbsp. butter softened

½ tsp vanilla

2 to 3 Tbsp. milk

Beat until smooth
