Peanut Brittle (Microwave)                                     Irene Woodward         

1 cup peanuts                                                           1 tsp. oleo

1 cup sugar                                                               1 tsp vanilla

1/2 cup white corn syrup                                          1 tsp. baking soda

1/2 tsp salt


Stir together peanuts, sugar, syrup and salt in 1 1/2 qt. bowl.  Cook 7 minutes in microwave, stirring well after 4 minutes.  After the minutes are up, add oleo and vanilla to syrup, blend well.  Return to microwave and cook 1  minute more.  Peanuts will be lightly browned and syrup very hot.  Add baking soda and stir gently until light and foamy.  Pour mixture on to lightly buttered cookie sheet.  Let cool 1/2 to 1 hour and then break apart.  Keep in a well sealed bowl.  Only make one recipe at a time - you can use macadamia nuts (or any other) in place of peanuts.
