Ann's BBQ

1 - 2 lb. chuck roast                                   1 large onion chopped

2 Tbsp. margarine                                      2 Tbsp. cider vinegar

2 to 3 Tbsp. brown sugar                         3 Tbsp. lemon juice

1 cup ketchup                                             3 Tbsp. Worcestershire

1 Tbsp. dry mustard                                  1 tsp. chili powder

½ cup water                                                 1 tsp. salt

1/8 tsp. pepper                                            garlic to taste

 

Mix all ingredient sin pan on stove.  When warm, pour over chuck roast in roasting pan .  Cover tightly with lid.   Bake at 350 3 to 4 hours until very tender.  It is done when you can easily shred with two forks.  Shred while it is still really hot.  Shred beef on cutting board or platter then return to the juices in the original pan and stir all together.  If you like juicier BBQ then add 1 and ½ times the sauce recipe.
