Bacon Chicken Roll-Ups                                     Erin & Mark Boe

12 bacon strips, slightly cooked

6 Boneless Chicken Breasts

1 – 8 oz. pkg. Cream Cheese, softened

1 Medium sweet onion, minced

Salt & Pepper or Seasoned Salt

Cook bacon over medium heat until cooked, but not crisp.  Drain on paper towel.  Flatten chicken to 1/8” thickness.  Spread cream cheese down center, top with onion.  Roll up from long side, tucking ends in.  Sprinkle with seasoning.  Wrap with 2 bacon strips and secure with toothpicks.  Place in a greased 13 x 9 x 2 baking dish.  Bake at 350 degrees for 35 – 40 minutes or until juice runs clear.  6 servings.
