3 med. potatoes, pared & thinly sliced                      1 1/2 Tbsp. oil

Salt, Pepper and Parsley                      1/2 cup chopped onion

1/2 cup chopped green pepper                      2 cups ham cut into strips

3 eggs                      1/2 cup shredded Cheddar Cheese

 

Put one half of the potatoes in oil in a 10 inch skillet.  Sprinkle with salt and pepper  and top with a layer of half of the onion and green peppers, seasoning with salt and pepper.  Top with half the meat.  Layer remaining vegetables on top.  Cover and cook over low heat until potatoes are tender, about 20 minutes.  Break eggs into a bowl and beat with a fork.  Pour eggs evenly over potatoes.  Add remaining meat in a spoke design.  Cover and cook until eggs are set, about 10 minutes.  Top with cheese and cook until cheese starts to melt, about 2 minutes.  Garnish with parsley in center.  Cut into wedges to serve.
