Mexican Meat Loaf (Serves 4)                        Sharon Congleton

1 T. plus 1 t. vegetable oil                        1 cup chopped onions

1 cup chopped peppers                        2 garlic cloves minced

1 packet instant beef broth and seasoning mix

1 pound ground turkey or veal                        4 oz. shredded Colby cheese

3/4 cup plain dried bread crumbs                        1/2 cup tomato sauce

1/4 cup plain yogurt                        2 Tbsp. chopped parsley

2 tsp. Worcestershire sauce                        1 teaspoon chili powder

dash pepper

 

Preheat oven to 375.  In a nine inch skillet heat oil over medium heat; add onions, peppers, garlic and broth mix.  Saute until onions are translucent.  In a medium mixing bowl combine sauteed vegetables with remaining ingredients.  Shape mixture into a loaf and place in an 8 x 8 baking pan.  Bake until browned, about 45 minutes.
