10 large potatoes cooked and mashed with 1 to 2 cups milk

¼ lb. butter

Salt/Pepper

1 or 2 tsp. yellow mustard

1 Corned Beef Roast, cooled and cut in small pieces

½ bag fresh sauerkraut

8 Tbsp. Thousand Island Dressing

2 cups shredded Swiss cheese

1 or 2 tsp. Caraway Seed (optional)

Cook Corned Beef Roast with spices and 1 can of dark beer until tender.  Mash potatoes and add butter, milk, mustard, salt and pepper to taste.  Spread ½ of the mashed potatoes into a 9 x 13” pan.  Layer with Corn Beef Roast chopped in small pieces.  Add sauerkraut (with caraway seed if desired) and top with Thousand Island Dressing.  Top with another layer of Mashed potatoes and Swiss Cheese.  Bake at 350 degrees until browned and bubbly. Serves 12 people.
