Southern Fried Chicken                                   Becky Grasso

4 large eggs                                                     ½ cup water

½ cup hot pepper sauce                                  2 cups self-rising flour

1 tsp. ground black pepper                              1 – 2 ½ lb. chicken, cut into pieces

Oil for frying, preferably peanut oil

House Seasoning

1 cup salt                                                         ¼ cup ground black pepper

¼ cup garlic powder

Wash and prepare chicken.  Beat eggs with water in a medium bowl, adding enough hot sauce to make the mixture bright orange.  Season chicken with House Seasoning.  After dipping the chicken in the egg mixture, dredge in the flour mixture, coating well.  Carefully place chicken in the hot oil.  Fry in batches.  Chicken is ready when it is brown and crispy.

Dark meat takes longer than white meat.  It should take dark meat about 13 to 14 minutes, white meat takes around 8 to 10.
