Peanut Butter Bar Cookies                        Bev Helling

1 cup brown sugar                        1 cup shortening

1/4 cup peanut butter                        1 cup oatmeal

1/2 teaspoon salt                        1 teaspoon baking soda

2 cups flour

 

Mix all ingredients in order given and mix together with a pastry blender or your hands, then pack into cookie sheet 16 x 12".  Pack down firm, but not too tight.  Bake at 350 degrees for 20‑25 minutes.  Let cool ten minutes, then frost with caramel frosting.  Cut into squares while warm.

 

Frosting

1/4 cup butter                        1 1/2 cup brown sugar

3 Tablespoons cream

 

Melt butter, add sugar and cream.  Cook until sugar is dissolved ‑‑ about 5 minutes.
