Abelskiver (Easy Version)                           Jan Peterson

5 eggs, separated                                          3/4 cup buttermilk

2 cups Bisquick


Beat egg whites until they form soft peaks.  Mix egg yolks, milk and Bisquick in bowl.  Fold in egg whites.  Heat Abelskiver pan and put 1/4 tsp. oil in each slot.  Fill slots 2/3 full with batter.  When they get bubbles on top and dry at edges (like pancakes), turn.  I use an icepick and cook until brown on the other side.  Serve hot with butter, jam, applesauce or cinnamon and sugar.  If you use Buttermilk Bisquick, you can use regular milk for the liquid.
