Schaum Torte Pie                                           Ione Oertel

4 egg whites                                                    1/4 tsp. cream of tartar

1 cup sugar

Filling

4 egg yolks                                                      1 teaspoon lemon rind

1/2 cup sugar                                                  5 Tablespoons lemon juice

1/2 pint whip cream or cool whip

Beat egg whites.  Add sugar and cream of tartar gradually.  Beat after each addition.  Beat until stiff.  Bake in pie pan at 225 degrees for 1 hr.  Beat egg yolks.  Add sugar rind and juice.  Cook in double boiler until thick.  Cool ‑ fold in whipped cream or Cool Whip.  Fill pie shell.  Chill 12 hours or more.
