Zucchini Pie                                                    Lynn Petersen

Crust:

4 cups flour                                                     2 cups sugar

3 sticks oleo                                                    1 teaspoon salt

Mix like pie crust until crumbly.  Put 1/2 mixture on large cookie sheet (jelly roll pan). Bake 10 minutes at 350 degrees

Filling:

8 cups zucchini, peeled and sliced.  Cook with 2/3 cup lemon juice until tender.  Add 1 cup sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg.  Bring to boil and add 1/2 cup crumb mixture.  Spread over baked crust.  Sprinkle remaining mixture of crumbs over filling.  Bake 35 minutes at 350 degree
