Country Mushroom Soup Taste of Home
1/4 cup butter/ or margarine 1/4 cup flour
2 cups chicken broth ˝ tsp. salt
1/4 tsp. pepper 2/3 cups finely chopped celery
1/4 cup finely chopped onion 4 to 5 cups sliced mushrooms (about 1 lb)
1 can evaporated milk
Melt butter, stir in celery, onions and mushrooms and sauté until tender. Stir in flour until smooth. Gradually stir in broth until smooth. Simmer uncovered for 15 minutes, stirring occasionally. Add evaporated milk - heat thoroughly.
