Broccoli/Onion Deluxe                        Jan Peterson

1# fresh or frozen broccoli                        3 medium onions quartered

 

Sauce

4 Tbsp. butter divided                        2 Tbsp. flour

1/4 tsp. salt                        Pepper to taste

1 cup milk                        1 - 3 oz. pkg. cream cheese

1/2 cup shredded cheddar cheese                        1 cup soft bread crumbs

 

Steam broccoli and onions until tender, drain and set aside.  In small pan, melt 2 Tbsp. butter.  Blend in flour, salt and pepper.  Add milk, cook and stir until thick and bubbly.  Reduce heat and blend in cream cheese.  Place vegetables in a casserole.  Pour sauce over, mix lightly.  Top with the cheddar cheese.  Melt remaining butter and toss with crumbs.  Sprinkle over casserole. 

Bake at 350 for 30 minutes.
