Company Cauliflower                        Jan Peterson

1 medium head cauliflower                        1/2 pound mushrooms (sliced)

1/4 cup green pepper ‑ diced                        1/3 cup butter or oleo

1/4 cup flour                        2 cups milk

1 teaspoon salt                        6 slices pimento cheese

dash paprika

 

Cook cauliflower in boiling salt water until tender and drain.  Meanwhile, brown mushrooms and green pepper lightly in butter.  Blend in flour; gradually stir in milk and cook, stirring constantly until thick.  Add salt.  Place 1/2 the cauliflower in a buttered 1 1/2 quart casserole.  Cover with 1/2 of cheese and 1/2 sliced vegetables.  Repeat layers.  Sprinkle with paprika.  Bake in oven 35 minutes at 350 degrees. (Carrots can also be added for color.)
