Cottage Cheese Zucchini Casserole                        Jan Peterson

1 ½# sliced zucchini                        1 cup chopped onions

1 cups sliced mushrooms

1 glove garlic, mnced                        2 Tbsp. Butter or oil

16 oz. cottage cheese                        2 cups Shredded Sharp Cheddar Cheese

3 eggs beaten                        2 Tbsp. Flour

2 Tbsp. Italian seasoning                        French fried onions (optional)      

½ tsp. salt

Heat oven to 350°.  Grease 2 ½ qt. casserole.  Cook and stir zucchini, onions, mushrooms and garlic in shortening in large skillet on medium high 5 minutes.  Drain in a colander; set aside.  Mix remaining ingredient sin large bowl.  Stir in vegetable mixture.  Pour into prepared casserole.   Bake 45 minutes or until knife inserted in center comes out clean.  Top with French fried onions if desired and put back in oven for 5-10 minutes.
