Hash Browns                        Jan Peterson

4 c. cooked chopped potatoes                        1/4 tsp. pepper

1/4 c. flour                        1/4 c. shortening

1/3 c. milk                        2/3 c. chopped onion

1 tsp. salt

 

Blend together flour, milk, & seasonings.  Add to cold, cooked potatoes and mix well.  Set aside.  In large fry pan heat shortening, add onions and cook 3 to 5 minutes until soft, but not brown.  Lift onions from pan with spoon or slotted spatula and add to potato mixture; mix well.  Turn potato mixture into fry pan, adding more fat as necessary.  Spread evenly over the pan with a spatula and cook about 20 minutes or until crisp and brown.  Turn to brown on other side.  Makes 6 servings.
