So Good Spinach                        Jan Peterson

2 T. Butter                        1/2 tsp lemon juice

1/2 tsp. sugar                        8 cups fresh spinach

1 qt. boiling water


In skillet, combine butter and sugar.  Cook over low heat until sugar is dissolved and butter is light golden brown, stirring occasionally.  Place spinach in large colander and pour boiling water over.  Add spinach to butter mixture, cook and stir 2-3 minutes or until heated through.  Serve immediately.
