Sweet Potato Casserole                        Jan Peterson

3 cups sweet potatoes      ½ cup brown sugar

2 eggs beaten      1 tsp. Vanilla

1/3 cup milk      1/4 cup butter (can use butter buds)

Topping

1/3 cup melted butter      1 cup light brown sugar

½ cup flour      1 cup chopped pecans

 

Cook potatoes, mash, and mix with ½ cup brown sugar, eggs, vanilla, milk and butter.  Spread in 9 x 13 pan.  In a small bowl, combine topping ingredients.  Mix well.  Sprinkle topping over casserole.  Bake at 350 degrees for 30 minutes
