Zucchini Bake                                                     Sharon Benda

4 cups peeled & sliced zucchini                       2 cups boiling water

2 eggs                                                                   1 cup miracle whip

1 medium onion chopped                                  1/4 cup chopped green pepper

1 cup grated Parmesan cheese                         Salt & Pepper

1 Tbsp. butter                                                      2 Tbsp. bread crumbs

 Cook zucchini in water until tender.  In large bowl beat eggs, stir in miracle whip, onions, green pepper, cheese, salt and pepper and spread on zucchini.  Put into 1-1 /2 qt. greased pan.  Dot  with butter and crumbs.  Bake at 350 for 30 minutes.  You can add mushrooms and bacon if you like.
