Graham Cracker Crust

1 ½ cup graham cracker crumbs  6 Tbsp. butter, melted

1/4 cup granulated sugar

 

Combine all the ingredients in bowl.  Blend well.  Press the crumb mixture onto the bottom and party up the sides of a greased 9" spring from pan.  Chill 10 minutes.

 

Cheesecake Filling

1 - 5 oz. bar good milk chocolate                        1 ½ lbs. cream cheese

2/3 cup powdered sugar                        4 large eggs

1/3 cup Bailey's Irish Cream                        4 Tbsp. butter, melted

1 cup sour cream

 

Preheat oven to 350.  Melt chocolate in the top of a double boiler.  Meanwhile, beat together the cream cheese and sugar in a large mixing bowl.  Beat in the eggs, one at a time, mixing thoroughly after each egg.  Stir in the melted chocolate, then add the Bailey's butter and sour cream.  Blend well.  Pour the mixture in the graham cracker crust and bake for 45 minutes.  Now prop open the oven door and let the cake cool to room temperature.
