Cheese Torte                        Aunt Mayme (Petersen)

 

Crust:

3 cups graham cracker crumbs                        1/2 cup melted butter

1/3 cup sugar

 

Mix and line a buttered pan with mixture.  Save some for top.  Dissolve 2 tablespoons of gelatin in 1/4 cup cold water.

 

Filling:

1 cup sugar                        2 egg yolks beaten

1/2 cup milk

 

Bring to a boil and add gelatin and water.  Stir until gelatin is dissolved.

Add to gelatin mixture: 2 - 8 oz.  pkg. creamed cottage cheese

 

Fold in:

2 egg whites beaten                        1 1/2 cup whipped cream

2 tsp. Vanilla

 

Beat well with electric mixer.  Add beaten egg whites and vanilla.  Fold in whip cream.  Chill.  Can add 2 Tablespoons lemon juice also if desired.
