Filling

2 eggs beaten                                                             1 2 cups evaporated milk

1 - 15 oz. Can mashed pumpkin                                 2/3 cup white sugar

1 Tbsp. Flour                                                             1 tsp. Cinnamon

2 tsp. Ginger                                                              2 tsp. Nutmeg

1/4 tsp. Salt

Crust

2 cup butter                                                               1 cup flour

1 cup white sugar                                                       4 tsp. Baking powder

1/4 tsp. Salt                                                                1 cup milk

1 tsp. Vanilla

Topping

2 Tbsp. White sugar

Preheat oven to 350 °.  In a large bowl, combine eggs, milk and pumpkin, add the rest of the filling ingredients.  Mix well and set aside.  Prepare the crust.  Melt the butter in a 9 x 13 baking pan.  In another bowl, mix the remaining crust ingredients until just combined, then pour into baking pan on top of the melted butter.  No need to mix.  Spoon or slowly pour the filling evenly over the crust batter in the pan.  Do not stir.  Sprinkle the 2 tablespoons of sugar over the top.  Bake 1 hour.  Serve with whipped cream if desired
