Pumpkin Surprise                        Jan Peterson

 

Grease bottom only of 9" x 13" pan.  Preheat oven to 350.

 

Bottom Layer:

1 Yellow Cake Mix (reserve 1 cup for topping)                        1/2 cup butter

1 egg

 

Mix cake mix (less 1 cup) with butter and egg.  Press into bottom of pan.

 

Filling:

1 - 16 oz. can pumpkin                        2 1/2 tsp. Pumpkin Pie Spice

1/2 cup brown sugar                        2 eggs

2/3 cup milk                        1 teaspoon vanilla

 

Mix together thoroughly and pour over cake.

 

Topping:

1 cup cake mix                        1/4 cup sugar

1/3 cup butter                        1/4 teaspoon cinnamon

 

Mix together and sprinkle on top of filling.  Bake 45‑50 minutes
