Rhubarb Crunch                        Jan Peterson

Bake at 350 degrees in 9 inch square pan

1 cup flour                        1/2 cup melted butter

3/4 cup oatmeal                        1 teaspoon cinnamon

1 cup brown sugar

 

Mix as crust until crumbly.  Put 1/2 of  mixture into well greased pan.  Add 4 cups cut rhubarb.

 

Filling:

1 cup sugar                        1 cup water

2 Tablespoons cornstarch                        1 teaspoon vanilla

2 Tablespoons Strawberry Jello

 

Combine above ingredients in a pan and cook until thick.  Pour over rhubarb.  Add other 1/3 of crumbs on top.  Bake 1 hour at 350 degrees.
