Rhubarb Dream Torte                        Mary Isaacson

 

2 cups flour                        1/4 tsp. salt

3 Tbsp. sugar                        1 cup butter

Mix and combine above ingredients.  Blend well.  Pat into ungreased 15 1/2 x 10 1/2 x 1 inch jelly roll pan.  Crust will be thin.  Bake at 350 for 20 to 25 min.  Remove beforehand if crust begins to brown.  Cool crust about one hour before adding topping:

 

Topping:

1 pkg. 8 oz. cream cheese                        1 cup powdered sugar

1 cup whipping cream whipped stiff or 2 cups Cool Whip

In mixing bowl combine cream cheese and sugar.  Fold cream or topping into cheese mix.  Spread on cooled crust.  Refrigerate 30 minutes.

 

Cover with Pie filling:

3 cups rhubarb                        1 1/2 cup sugar

1 cup water                        1/4 cup flour

2 beaten eggs                        Red food coloring if desired

Cook on top of stove, stir constantly until thick.  Cool and spread on cream cheese topping.
