Three Pepper Quesadilla Becky Grasso
1 cup thinly sliced green
pepper 1 cup thinly sliced red
pepper
1 cup thinly sliced yellow
pepper 2 cup onion slices
1 2 Tbsp. margarine 1/4 tsp.
cumin
1 - 8 oz. cream cheese 1 - 8 oz. sharp
cheddar cheese
2 cup grated Parmesan 10 flour tortillas
Saute’ peppers and onions
in margarine. Stir in cumin and drain
liquid (Save) Beat cheeses
together. Spoon 2 Tbsp. cheese mixture
on to each tortilla. Top with
peppers. Fold tortillas in half. Place on baking sheet. Brush with liquid. Bake 10 minutes in 350 oven.
Cut in thirds.
