Chocolate Zucchini Bread                             Jan Peterson

1 3/4 c. sugar                                                  4 T. cocoa

½ c. oil                                                            1 tsp. soda

2 eggs                                                             1 tsp. cinnamon

1 T. vanilla                                                      1 tsp. salt

½ c. buttermilk or sour milk                          2 ½ c. flour

1/4 c. chocolate chips                                     ½ c. nuts (optional)

2 c. shredded zucchini

 

Mix all ingredients together and bake at 375° for 35-45 minutes in a greased and floured pan.  Test center for doneness.  Makes 3 small loaves.
