Sausage and Peppers Sue Jahns
1 lb. Italian sausage cut
into chunks 2 Tbsp.
water
2 large green peppers (cut
in 3/4 wide strips) 1
medium onion in rings
2 cloves of garlic minced 1 can zesty tomato soup
1 cup water 1 tsp. vinegar
1 bag Uncle Ben's rice
(family size) - or make your own
Cook sausage in 2 Tbsp. of
water (5 min) uncovered and drain. Add
pepper, onion and garlic - cook until tender.
Spoon off fat. Stir in soup,
water and vinegar. Reduce heat to
low. Cover and simmer 10 min. Serve over rice. Cook the sausage whole, then cut in chunks.
