Vegetable Stuffed Manicotti Mary Fetter
About 20 Jumbo Shells
boiled according to the package
Mix:
1 1/4 shredded zucchini 3/4 tsp. Italian
seasoning
3/4 cup finely shredded
carrots 1/2 cup
finely sliced onion
1 cup low fat Ricotta
cheese 1/4 cup
Parmesan cheese
3/4 cup Mozzarella cheese 1 egg
Mix all together and stuff
shells. Put into 13 x 9 x 2 pan. Pour 1 jar of Italian sauce over and bake
at 350 for an hour.
