Date Bars Jan Peterson
1 1/4 cup flour 1/3 cup sugar
1/4 lb butter
Date Nut Layer
½ cup brown sugar 1/4 cup white
sugar
2 eggs` 1 tsp. Vanilla
2 tsp. Baking powder 1/4 tsp. Salt
1/4 tsp. Ground nutmeg 1 cup
chopped pecans
1 cup chopped pitted dates
Preheat oven to 350. Grease 9 x 13 baking pan. To make the crust, mix flour, sugar and
butter in food processor until crumbly.
Press 3/4 of this crust into bottom of prepared pan. Bake 16-18 minutes
or until edges are lightly brown. While
the crust bakes, makes the Date-Nut Layer.
Using the same food processor bowl, mix both sugars, eggs and vanilla
until frothy. Add flour, baking powder,
salt and nutmeg; mix until thoroughly mixed.
Mix in nuts and dates until combined.
Spread topping over hot pastry.
Add remainder of crust on top.
Bake 15 to 18 minutes more.
Sprinkle with powdered sugar when cool.
Cut into 1 x 2 bars.
